Zivolife at Central, Lima

In 2023, Central in Lima was named the world's best restaurant by The World's 50 Best Restaurants. It has since been inducted into the Best of the Best, the permanent hall of fame reserved for restaurants that have reached that position. It is, by any measure, one of the most significant fine dining institutions in the world.

Central added Zivolife to its menu.

Chef Virgilio Martinez built Central around a single organizing idea: that an ingredient understood completely, traced to its precise origin and conditions, is more compelling than complexity layered over an unknown base. The Alturas Mater tasting menu moves through sixteen courses drawn from Peru's ecosystems, each defined by where and how the ingredient grew rather than what was done to it afterward. Provenance and integrity are the point.

Zivolife is one whole plant organism. One strain, nothing extracted, nothing added. The decision to use it at Central was not about adding a health ingredient to a tasting menu. It was a recognition that the ingredient itself warranted a place at the table.
